Founded and run by an ex-environmental scientist, Autonomy Distillers is a new venture with a ton of drive to do things a little differently. As you’d expect, sustainability sits at the core of their beliefs. They collect waste fruit for use in their products and shred all incoming cardboard for reuse as packing material.

For this Nocino Walnut Liqueur, a midsummer harvest of unripe green walnuts are transformed through a slow maceration with spices and citrus to create a dark, rich and aromatic liqueur.

Tasting notes:

Sweet, warming and woody with a slight tannic bitterness, expect the flavours of toasted walnuts, cinnamon and vanilla, balanced with the brightness of fresh citrus peel.

Serving suggestions:

  • Neat. Ice highly recommended. Garnish with an orange twist.
  • Walnut and Plum Negroni. Pour 30ml Nocino Walnut Liqueur, 30ml Davo Plum Aperitivo Bitters and 30ml gin over ice into a rocks glass. Stir, and garnish with an orange peel.
  • Walnut Alexander. Fill a cocktail shaker with ice and pour in 30ml Nocino Walnut Liqueur, 30ml aged rum, 15ml heavy cream and 1tsp maple syrup. Shake, then strain into a cocktail glass. Garnish with freshly grated nutmeg.
