Founded and run by an ex-environmental scientist, Autonomy Distillers is a new venture with a ton of drive to do things a little differently. As you’d expect, sustainability sits at the core of their beliefs. They collect waste fruit for use in their products and shred all incoming cardboard for reuse as packing material.
Garnet red in colour, Autonomy's Davo Plum Aperitivo Bitters balances tart Davidson Plums, a lip-puckering sour native Australian plum grown in tropical rainforests, with Rosella flowers, sweet Aussie oranges and a hint of Tasmanian Pepperberry.
Tasting notes:
Sweet with a hint of bitterness, expect flavours of plum, citrus and raspberry with a slight peppery finish.
Serving suggestions:
- Neat. Ice highly recommended. Garnish with an orange twist.

Davo Plum Spritz. Pour 90ml sparkling wine, 30ml Davo Plum Aperitivo Bitters and 15ml soda water over plenty of ice in a large wine glass, and garnish with an orange peel.
- The Rosie. Muddle 4 strawberries in a cocktail shaker. Fill with ice and add 125ml rosé, 30ml Davo Plum Aperitivo Bitters and 15ml lemon juice and stir. Pour into a wineglass and top up with soda water.
